Delicious and nutritious oatmeal bars packed with blueberries, perfect for breakfast or a snack.

Ingredients

  • 2 cups rolled oats
  • 1 cup mashed ripe bananas (or applesauce)
  • 1/2 cup honey (or maple syrup)
  • 1 cup fresh or frozen blueberries
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Combine the rolled oats, mashed bananas, honey, cinnamon, and salt in a mixing bowl. Mix until well combined.
  3. Fold in the blueberries gently to the mixture.
  4. Pour the mixture into the prepared baking pan and spread it evenly.
  5. Bake in the preheated oven for about 25-30 minutes or until the edges are golden brown.
  6. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely.
  7. Once cooled, cut them into squares and serve or store for later!

Notes

Use ripe bananas for natural sweetness and moisture. Store in an airtight container for up to three days at room temperature or a week in the refrigerator.
