Watermelon Salad with Feta & Mint

A refreshing salad featuring juicy watermelon, salty feta, and cool mint, tied together with a zesty lime and olive oil dressing.

Ingredients

  • 8 cups seedless watermelon, cut into 1-inch cubes (about 1 small watermelon)
  • 4 ounces feta cheese, crumbled (about 1 cup)
  • 1/2 small red onion, very thinly sliced (about 1/2 cup)
  • 1/2 cup fresh mint leaves, torn
  • 1 medium cucumber, peeled and diced (optional)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lime juice (or lemon)
  • 1 teaspoon honey or agave (optional)
  • Pinch of sea salt and freshly ground black pepper
  • Optional finish: pinch of red pepper flakes or a light drizzle of balsamic glaze

Instructions

  1. Prep the produce. Cut the watermelon into 1-inch cubes and pat dry.
  2. Slice the red onion very thin, and soak in cold water for 5 minutes if needed.
  3. Make the dressing by whisking together olive oil, lime juice, honey, salt, and pepper in a small bowl.
  4. Add the watermelon to a large bowl, then gently mix in cucumber and red onion.
  5. Pour the dressing over the salad and toss gently to coat. Add mint and most of the feta, then toss again lightly.
  6. Chill the salad for 15–20 minutes to meld flavors.
  7. Top with remaining feta and optional red pepper flakes or balsamic drizzle before serving cold.

Notes

Best served fresh, but leftovers can be stored in an airtight container for up to 1 day. Keep watermelon, onion, feta, and mint separate until serving.
