A playful no-bake cookie that mixes oats, chocolate, and coconut, perfect for a quick snack or dessert.

Ingredients

  • 3 cups quick oats
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup creamy peanut butter (or almond butter)
  • 1/2 cup unsalted butter or dairy-free spread
  • 1 1/2 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Line a baking sheet with parchment or wax paper.
  2. In a medium saucepan, melt butter and peanut butter over low heat, stirring until smooth.
  3. Remove from heat. Whisk in cocoa powder, vanilla, and a pinch of salt until smooth.
  4. Stir in powdered sugar until the mixture thickens.
  5. Add oats and shredded coconut. Mix until evenly coated.
  6. Drop spoonfuls onto the prepared sheet, shaping into small mounds.
  7. Chill in the refrigerator for at least 30 minutes, until firm.
  8. Store chilled in an airtight container.

Notes

For a crunchy version, stir in 1/2 cup chopped toasted nuts or seeds. You can also fold in mini chocolate chips for added flavor.
