Delicious and nutritious pumpkin spice protein balls perfect for a quick snack or energy boost.

Ingredients

  • 1 cup oats
  • ½ cup pumpkin puree
  • ¼ cup nut butter (peanut or almond)
  • ¼ cup honey or maple syrup
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine the oats, pumpkin puree, nut butter, honey or maple syrup, pumpkin pie spice, vanilla extract, and salt.
  2. Mix everything together until a sticky dough forms. If it feels too crumbly, add a little more nut butter or pumpkin puree to get the right consistency.
  3. Scoop out small amounts of the mixture and roll them into bite-sized balls.
  4. Place the balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to help them firm up before serving.

Notes

Store in an airtight container in the refrigerator for about a week. Can be frozen for up to 3 months.
