1 cup oats
½ cup pumpkin puree
¼ cup nut butter (peanut or almond)
¼ cup honey or maple syrup
1 tsp pumpkin pie spice
1 tsp vanilla extract
A pinch of salt
Instructions
In a large mixing bowl, combine the oats, pumpkin puree, nut butter, honey or maple syrup, pumpkin pie spice, vanilla extract, and salt.
Mix everything together until a sticky dough forms. If it feels too crumbly, add a little more nut butter or pumpkin puree to get the right consistency.
Scoop out small amounts of the mixture and roll them into bite-sized balls.
Place the balls on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to help them firm up before serving.
Notes
Store in an airtight container in the refrigerator for about a week. Can be frozen for up to 3 months.
