Garlic Herb Chicken Thighs are juicy, simple, and full of flavor, perfect for a quick weeknight dinner.

Ingredients

  • 6 bone-in, skin-on chicken thighs (about 2–2.5 lbs)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme or 1 tbsp fresh, chopped
  • 1 tsp dried rosemary or 1 tbsp fresh, chopped
  • 1 tsp dried oregano or mixed Italian herbs
  • 1 tbsp lemon juice (optional)
  • 1 tbsp butter (optional, for finishing)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towel.
  3. In a bowl, mix garlic, olive oil, salt, pepper, thyme, rosemary, oregano, and lemon juice.
  4. Rub the mix under the skin and over the top of each thigh; let sit for 10 minutes if you have time.
  5. Place thighs skin-side up on a baking sheet or in a shallow roasting pan.
  6. Roast for 30–40 minutes, until the internal temperature reaches 165°F (74°C) and the skin is golden.
  7. If skin isn’t crisp, broil for 1–2 minutes while watching closely.
  8. Let rest for 5 minutes before serving. Finish with a small pat of butter or a squeeze of fresh lemon if you like.

Notes

For extra crispy skin, pat chicken dry before seasoning and avoid overcrowding the pan.
